Cloud Bread Recipe

– ¼ teaspoon cream of tartar (optional, but helps with fluffiness)

– Big pinch of salt

Method:

1. Preheat the oven: Set your oven to 150°C (300°F) and line a baking tray with parchment paper.

2. Separate the eggs: Carefully separate the egg whites from the yolks into two large mixing bowls.

3. Whip the egg whites: Add the cream of tartar to the egg whites and whip using a hand mixer or whisk until stiff peaks form. This should take about 3-5 minutes. The cream of tartar helps stabilise the egg whites and makes them extra fluffy.

4. Mix the yolks: In the other bowl, mix the egg yolks with the softened cream cheese, cottage cheese (or yoghurt), sweetener, and salt until smooth.

5. Combine the mixtures: Gently fold the whipped egg whites into the egg yolk mixture. Use a spatula and fold slowly so the airiness of the whites remains intact.

6. Shape the bread: Spoon the mixture onto the lined baking tray to form 4-6 cloud-like mounds. Flatten them slightly with the back of a spoon to give them a round shape.

7. Bake: Bake in the preheated oven for 25-30 minutes until they are golden brown on the outside and firm to the touch.

8. Cool: Once baked, allow the cloud bread to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.

 


Tips for Perfect Cloud Bread:

– Get creative with flavours: While the basic recipe is delicious on its own, feel free to experiment! Add herbs, garlic powder, or even a sprinkle of grated cheese for a savoury twist. If you’re craving something sweet, try adding a dash of vanilla extract or a bit of cinnamon.
